One of our members has arranged with Public Wines, 23 Witherspoon St., to do a wine tasting for us. Our certified Sommelier and educator for the evening will be Sebastian Koncurat, who has 20 years of experience in the wine and culinary industries.

Optional Cheese Pairings suggested by Sebastian:
VBC Aged Couple: This is goat milk-based cheese from Vermont. Inspired by the traditional Crottin de Chavignol' Loire Valley cheese, it has a wrinkly edible rind and shows herbal earthy flavors. Flavour profile is ideal to pair with the Sauvignon Blanc from Menetou-Salon AOC made by Pierre Clement.
Baechler Truffle Raclette: Sourced from cow milk from the French wine region of Aquitania, this is a medium soft cheese. Very aromatic, this cheese is packed with flavours of dried fruit, toasted almonds and black truffles. Ideal to accompany the Pineau D'Aunis Rose wine made by Domaine Brazilier in the area of Coteaux de Vendemois AOC.
Morbiere: Made from unpasteurized raw cow milk from the North East region of Jura in France, this is a semi-firm cheese showing nutty, fruity and slightly sweet flavors. Ideal pairing with the Pinot Noir from Sancerre made by Daniel Crochet.
Comte: Made from unpasteurized raw cow milk, this is the oldest of all regulated cheeses in France. It has a medium hard texture with a nutty and earthy note along with a spicy and savory finish. Ideal pairing with the Cabernet Franc based red from Anjou AOC made by Chateau Soucherie
